Fit Friday (and 3 quick + delicious salad recipes)

Happy Friday babes! As I mentioned on Wednesday, I'm prepping for a major health makeover - aka the Isagenix 30-day cleanse. I've never done a "cleanse" before, but this one seems realistic (nothing too crazy, you are allowed to eat regular food), their products are organic, and I have personal friends who've had great success, and continue to use the Isagenix products in their everyday lives. I'll be documenting the process, and would be more than happy to share it if you ladies are interested - please let me know! 
I've been super into making salads lately, and have three recipes you need to try. I was never all that crazy about home-made salads until I actually took the time to put a decent plate of greens together. Each of these only takes about 5 minutes to make (I had the couscous and chicken pre-made), and I promise you won't be disappointed! 

Mediterranean Chopped Salad With Couscous 
Ingredients: 
spinach - about 2 cups, chopped 
cherry tomatoes - handful, chopped 
cucumber - 1 cup, chopped 
feta - 1 tablespoon
kalamata olives - 1/4 cup, chopped 
couscous - 1/2 cup (I purchased the box mix, which only takes 5 minutes to make) 
salt + pepper to taste 

Dressing: 
olive oil - about 1 tablespoon (or less)
fresh squeezed lemon juice - 1/2 lemon
red wine vinegar - 1 tablespoon 

Fruit + Spinach Salad 
Ingredients: 
spinach - about 2 cups, chopped 
grapes - handful, chopped 
1 apple, chopped 
feta - 1 tablespoon
dried cherries/pomegranate/craisins - 2 tablespoons 
pine nuts - 1 tablespoon (or less) 
salt + pepper to taste 

Dressing: 
olive oil - about 1 tablespoon (or less)
fresh squeezed lemon juice - 1/2 lemon
red wine vinegar - 1 tablespoon 

Chicken + Tomato + Avocado Salad 
Ingredients: 
spinach - about 2 cups, chopped 
cherry tomatoes - handful, chopped 
1/2 avocado - cubed 
feta - 1 tablespoon
pine nuts - 1 tablespoon (or less) 
1/2 chicken breast - chopped 
salt + pepper to taste 

Dressing: 
olive oil - about 1 tablespoon (or less)
fresh squeezed lemon juice - 1/2 lemon
red wine vinegar - 1 tablespoon 

I hope you will take the time to try one of these salads (I promise they are delicious!). I have to say the Mediterranean chopped is my favorite - I'd like to add chicken to it next time. In addition to my 30-day cleanse, I'll be continuing my workouts...and had to share a few Pins that keep me motivated ;).   4. OMG! A 30-day cleanse? I have done a 7-day cleanse a couple times and it was really hard, but so worth it. I felt amazing! I think my boyfriend and I are going to do this cleanse starting on Monday :) It is a restrictive cleanse day to day (so first day only fruits but eat as much as you want). It is hard for me because I like a variety and to stick to only certain things, even though you can eat as much as you want, is really difficult! Anyway, these salads look absolutely amazing! I am going to have to Pin and use these recipes! Good luck on your cleanse, can't wait to hear more about it!
