Greek Yogurt Pancakes
Happy Monday ladies! Is anyone else bummed the holidays are over? I spent a few days in Iowa with my family and now I’m in Dallas for the week hanging out with Kyle and his. I wanted to share one of my new favorite recipes to make. I’ve had a really hard time eating healthy so far this pregnancy…even yogurt upsets my stomach! So I’ve been trying new recipes to try and get something besides Ramen Noodles in my tummy. These pancakes are so easy to make and are so delicious and fluffy! All you need is:

One 5.3 ounce container of Greek Yogurt (any flavor)
2 egg whites
1/2 cup flour
1 teaspoon of baking soda
1/2 cup blueberries and half banana (or any fruit you like!)
Agave sweetener

Directions:
1. Mix yogurt and egg whits in a bowl until blended and smooth. Stir in baking soda and flour. It will be extremely thick!
1. Spray griddle or pan with cooking spray and use 1/3 measuring cup to scoop the batter. Spread the batter into a circle and drop your fruit on it. Cook for about 3 minutes until golden brown and 2 minutes on the other side.

I used toasted coconut vanilla Greek yogurt for one batch and they were ah-mazing. Share some of your favorite healthy recipes!
