2 Healthy Breakfast Recipes
Happy Friday, ladies! Hope you had a great week – mine was not the best…you may have seen on instagram that my sweet grandpa passed away unexpectedly, and myself and Sophia have been stuck in the house with a bad cold for most of the week. I am so lucky to have been able to spend so much time with my grandpa, and he lived a wonderful life, but it’s never easy to lose someone, and this was one of the first ‘big losses’ in my family, making it a little more difficult. We will be okay, move forward, and continue to remember and talk about the amazing man he was. Needless to say, I’m ready for the weekend to have an extra set of hands around the house. 
I wanted to share two of my favorite healthy breakfast recipes with you today – both are super simple, healthy, and quick (which is always necessary in our house). Sophia (who is 2) loves these, so both are great options for kids as well. 
Greek Yogurt Parfait:
– 1/2 cup greek yogurt
– 1/2 cup strawberries
– 1/3 cup kiwi (or any other fruit you prefer) 
– 1/3 cup granola 
– 1 tablespoon honey 
Directions:
– Layer the ingredients in a glass, OR toss them all together in a bowl and mix (which is what I do for Sophia)
– I like to add clementines, bananas, blueberries, and whatever else I have on hand
Avocado Toast:
– 1 slice bread
– 1/2 avocado
– cherry tomatoes
– splash of freshly squeezed lime juice
– dash of salt, pepper, and red pepper flakes
Directions:
– Pop bread in the toaster (if it wasn’t obvious) 
– While bread is toasting, mix avocado, salt, pepper, and lime juice together (mashing with a fork)
– Slice tomatoes 
– Spread avocado mixture on the toast, top with tomatoes and red pepper flakes
