6 Easy + Delicious Recipes Using Shredded Chicken (from the Crock-Pot)
I’m always searching Pinterest for easy dinners – I like to cook, but I don’t have hours to spend on intense gourmet recipes. I normally cook 4-5 nights/week, so having a few go-to recipes is key for me. I’ve had a few people ask me about cooking during the week, and what I make, so I wanted to share 6 of my favorite (and EASY) chicken recipes with you. One of my favorite kitchen appliances is my slow cooker. Seriously, it’s amazing – you can throw meat in in the morning, and you’ve basically got a meal ready at night. Some people use their slow cooker for an entire meal, and this can definitely be done, but I prefer to use it only to cook my meat, then finish the rest of the meal on the stove or in the oven. It gives it less of that “stew” flavor that a slow cooker creates, if you know what I mean. I make all of these meals on the regular, and they take less than 30 minutes when I use chicken from my slow-cooker. Bonus – they taste amazing! Nothing better than an easy, crowd-pleasing meal! 
*When I cook chicken in the crock-pot, I add 3-4 chicken breasts (fresh is best, but frozen is fine as well), 2 cups of water and 2 bouillon cubes or chicken stock – whichever I have on hand, and cook on low for 7-8 hours. I then remove the chicken from the crock pot, drain off any liquid, and place chicken breasts in a large mixing bowl (they should be very tender and falling apart at this point). Lastly, I shred the chicken in the bowl using two forks, and add to the main dish (I have the rest of the meal done before adding the chicken, so it stays warm).

6. BBQ Pulled Chicken Sandwiches
Perfect for summer nights, served with a side of potato chips, cole slaw, or baked beans! For this, I literally cook the chicken, and during the shredding process (scroll up to see my process), add BBQ sauce, and pile on a great bun. This is probably the easiest of all 6 recipes, and one of my top two most requested meals!
