Clean Eats: Caramel Oats Recipe
Good morning, loves! Hope you all had a great weekend – ours was super fun + jam packed. I’m exhausted this morning, so am definitely going to be making these caramel oats to get me going this morning. I came across this recipe on snapchat (of all places), and have been making it ever since! I am usually not a huge oatmeal fan, but these are amazing – especially topped with tons of fresh fruit! This is an extremely healthy breakfast full of nutrients, and it will keep you full for hours, enjoy! 

Ingredients:
1/4 cup oats
3 Medjool dates (pitted and torn into small pieces)
1/2 tsp vanilla extract
1 c water
A couple splashes of coconut milk
Fresh fruit for topping

Directions:
1. Combine oats, dates, vanilla, water, and coconut milk in small pot
2. Cook on stove over medium heat, pressing dates down (so they will melt into the oats), stirring occasionally
3. Transfer to a bowl when oats are fully cooked (about 5-10 minutes), and top with fruit (I topped mine with strawberries, bananas, blueberries, goji berries, raspberries, coconut,and granola..yumm)
4. Enjoy!
