Ingredients:
1/4 cup oats
3 Medjool dates (pitted and torn into small pieces)
1/2 tsp vanilla extract
1 c water
A couple splashes of coconut milk
Fresh fruit for topping
Directions:
1. Combine oats, dates, vanilla, water, and coconut milk in small pot
2. Cook on stove over medium heat, pressing dates down (so they will melt into the oats), stirring occasionally
3. Transfer to a bowl when oats are fully cooked (about 5-10 minutes), and top with fruit (I topped mine with strawberries, bananas, blueberries, goji berries, raspberries, coconut,and granola..yumm)
4. Enjoy!
