Ever since we went into the Q, my motivation to cook has gone out the window. I’m trying to get back into the routine of cooking, & I’m aiming for 3-4 nights/week. I’m giving myself five new (and easy) recipes to try for the month, and I’m sharing them with you in case anyone else needs some motivation, too ;). Honestly, I’m not mad about including 2 crock pot meals either, whatever is easiest at this point.
Slow Cooker Chicken Tacos
Let’s be real, chicken tacos are not necessarily a ‘new’ recipe I’ve never made before, but I always love recipes from skinnytaste & I’ve never made them with the cabbage slaw. These look easy & delicious.
Corn, Avocado, and Quinoa Salad with Marinated Tomatoes
Wow this salad looks amazing! I’m going to add rotisserie chicken to it for dinner – easy and filling!
Crock Pot White Chicken Chili
My husband is not a huge fan of soup, but I am lol! I could honestly eat soup on the daily, and this white chicken chili is perfect for anyone craving fall, like me.
Best Chicken Enchiladas Ever
It’s been so long since I’ve had chicken enchiladas, and I love them! This recipe looks so good and has been around for 10 years, and the author still stands by the name! Best ever! Can’t wait to try these.
Cacio e Pepe
One of my all-time favorite pasta dishes, if not #1! If a restaurant has this on the menu, chances are I’m ordering it! I’ve never made it at home, though, and it seems like a super easy weeknight meal! One tip – bucatini is hands-down the best pasta for this dish!
We always get a lot of questions about our kitchen items – dishes, pots + pants, etc, so I’m linking our favorite kitchen products for you as well!
