Ever since we went into the Q, my motivation to cook has gone out the window. I’m trying to get back into the routine of cooking, & I’m aiming for 3-4 nights/week. I’m giving myself five new (and easy) recipes to try for the month, and I’m sharing them with you in case anyone else needs some motivation, too ;). Honestly, I’m not mad about including 2 crock pot meals either, whatever is easiest at this point.

Cacio e Pepe
One of my all-time favorite pasta dishes, if not #1! If a restaurant has this on the menu, chances are I’m ordering it! I’ve never made it at home, though, and it seems like a super easy weeknight meal! One tip – bucatini is hands-down the best pasta for this dish!
