One of my (Brooke) goals for the new year is to start cooking at home again. Over the last 6 months, this part of my routine completely fell off. I’m aiming for most recipes to be healthy(er), and asked for suggestions on stories last week. The response was overwhelming, so I’m turning this into a weekly series: What We’re Making Monday. I’ll/we’ll be sharing our menu plan for the week. Today kicks it off, so here we go! If you have a recipe we should feature & try, email it to us at brookeandmeggan@somewherelately.com.
On the menu this week:
Brooke:
Monday: Egg roll in a bowl (I’m serving with Jasmine rice)
Tuesday: Johnny’s Filets in the oven (one of our favorites, so easy & delicious!) with green beans and baked potatoes
Wednesday: Green Goddess salad: butter lettuce, avocado, cucumber, pistachios, tomatoes, sliced rotisserie chicken, parm, and croutons, topped with vinaigrette dressing, salt & pepper
Thursday: Greek turkey burgers with a simple Greek salad
Friday: leftovers
Saturday: takeout
Sunday: Baked chicken tenders with kale salad
Meggan:
Monday: Orecchiette pasta with chicken sausage and broccoli. This is one of my easy, go-to meals that the family loves!
Tuesday: Slow cooker chicken tacos. Super easy and yummy!
Wednesday: Spaghetti squash pad thai. I’m going to make this meatless but you can easily add chicken for more protein!
