What We’re Making For Dinner This Week

Meggan:
Sunday: Sheet-pan Mediterranean shrimp over brown rice and hummus. My SIL made this for me last week and it was so good!
Monday: Basil parmesan crusted salmon with roasted brussels sprouts and side salad
Tuesday: Crock pot turkey sloppy joes – I don’t follow an exact recipe/measurements but it’s similar to this one
Wednesday: Grilled fajita salad. We do grilled romaine, chicken, peppers, red onion, cherry tomatoes, corn, black beans, and avocado with a creamy cilantro lime dressing
Thursday: Veggie burgers with steamed broccoli
Friday: Out to dinner for Kyle’s birthday!

Brooke:
Sunday: BBQ Chicken Thighs (cooked in the crockpot) – serving with baked potatoes, and broccoli.
Monday: Spaghetti squash sausage lasagna boats – these look so good!
Tuesday: Easy burrito bowls
Wednesday: Sweet and spicy glazed salmon (I’ll be doing mine in the oven).
Thursday: Lulu’s birthday – we will order in taco packs from our favorite spot!
Friday: Out to dinner because my mom will be here!
